Option 1: Pan-seared Salmon with Grapefruit Beurre Blanc, served with Fondant Potatoes and Grilled Asparagus; or Option 2: Grilled Vegetable Lasagna served with Garlic Focaccia.

Dessert is White Chocolate Pistachio Cheesecake with Gingersnap Crust, a Quenelle of Citrus Mousse, Mixed Berry Compote.
